A sweet and savory roasted pork, char siu is probably the most popular roasted meat preparation in Cantonese cuisine. If you walk by a Chinese BBQ restaurant, every single one will always have char siu hanging on its hooks by the window.
🥘 Ingredients

Shaoxing wine1 tbsp

brown sugar4 tbsp

five spice powder1 tsp

garlic salt1 tbsp

hoisin sauce1 tbsp

honey2 tbsp

light soy sauce2 tbsp

oyster sauce2 tbsp

pork shoulder1 kg

red fermented bean curd1 cube

red wine2 tbsp

water2 tsp

1Cut pork shoulder into long slices, roughly about 1 inch thick. Poke each side repeatadly with a fork.pork shoulder: 1 kg

2To a bowl add: garlic salt , brown sugar , oyster sauce , light soy sauce , hoisin sauce , red wine , Shaoxing wine , red fermented bean curd , five spice powder , honey and water . Mix until smooth.garlic salt: 1 tbsp, brown sugar: 4 tbsp, oyster sauce: 2 tbsp, light soy sauce: 2 tbsp, hoisin sauce: 1 tbsp, red wine: 2 tbsp, Shaoxing wine: 1 tbsp, red fermented bean curd: 1 cube, five spice powder: 1 tsp, honey: 2 tbsp, water: 2 tsp

3Place the meat into a zip-top bag , pour the sauce in, and massage the pork for about ⏱️ 2 minutes and then push all the air out of the bag and seal it. Marinate overnight in the fridge .

4Preheat the oven to gas mark 7 or 218° C. Put foil in a baking tray with a grill rack on top. Put a small amount of water in the tray then lay the pork on the rack.

5Put the pork in the oven for ⏱️ 15 minutes then baste it.

6After another ⏱️ 15 minutes baste it again.

7After ⏱️ 10 minutes baste it one last time and cook for ⏱️ 5 minutes .

8Once the char siu has finished its last cycle in the oven, cut into slices.
